Get your BBQ game right with this basic potato salad

With spring comes months of barbecues, picnics and other outdoor parties, and a crowd favorite side dish for any such events is a good, basic potato salad.

Potato salad can be jazzed up with all sorts of great ingredients, but sometimes simple is just better. One recipe we have been making for years is a basic potato salad made with red potatoes, red onion, celery and mayo. Add a healthy dose of salt and fresh ground pepper, and you have a potato salad that is a crowd-pleaser every time. Seriously, we can’t tell you how often we get asked for this recipe. So here it is.

The ingredients you need for our basic potato salad

I worked with a caterer for private aviation, and this recipe was the side dish we would make for our corporate clients’ catering trays. We also sold it from our lunch counter to go along with our specialty sandwiches.

This is a basic recipe that we have been serving for years, but there are a lot of ways you can enhance it. Add some bacon bits; stir in some Dijon mustard; add some chopped herbs, or a handful of chopped scallions. You could even grill the potatoes instead of boiling them. Use your imagination and make this recipe yours.

2 1/2 pounds red potatoes, cut in 1 inch dice
1/2 cup finely diced celery (2 ribs)
1/2 cup finely diced red onion (1 small red onion)
1 1/2 cup mayonnaise
2 tablespoons kosher salt
1 tablespoons fresh ground pepper


Cut the potatoes into 1 inch dice and add to a large pot. Fill with water just to cover the potatoes. Cook on medium until fork tender. Drain and cool.

Cut celery and red onion into small dice. In a large bowl toss potatoes, celery and red onion. Sprinkle with salt and pepper. Add mayo and gently toss to cover. Adjust salt an pepper.
